Slow Cooker Peach Chili

Ingredients
  

1 lb ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

2 cups fresh peaches, peeled and diced (or frozen, thawed)

1 small red bell pepper, diced

2 tbsp chili powder

1 tsp cumin

1 tsp smoked paprika

½ tsp cayenne pepper (adjust for spice level)

Salt and black pepper to taste

1 tbsp olive oil

Fresh cilantro, for garnish

Sour cream or Greek yogurt, for serving (optional)

Instructions
 

Brown the Meat: In a skillet over medium-high heat, add olive oil and ground meat. Cook until browned, breaking it up with a spatula, about 5-7 minutes. Drain excess fat if necessary.

    Sauté Onions and Garlic: Add the diced onions and garlic to the skillet. Sauté for 3-4 minutes until the onions are translucent.

      Combine Ingredients: In the slow cooker, add the browned meat mixture, kidney beans, black beans, diced tomatoes, diced peaches, and red bell pepper.

        Season the Chili: Sprinkle in the chili powder, cumin, smoked paprika, cayenne pepper, salt, and black pepper. Stir well to combine all ingredients.

          Cook: Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours until heated through and flavors meld together.

            Serve: Once done, taste and adjust seasoning if needed. Ladle the peach chili into bowls and garnish with fresh cilantro and a dollop of sour cream or Greek yogurt if desired.
