2 lbs boneless, skinless chicken thighs

1 cup hot honey (store-bought or homemade)

1/2 cup soy sauce

1 tablespoon apple cider vinegar

4 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/2 teaspoon onion powder

1/2 teaspoon salt

8 burger buns

4 slices of sharp cheddar cheese (optional)

Sliced pickles or coleslaw for topping (optional)

Fresh cilantro for garnish (optional)

Instructions
 

Prepare the Chicken: In a slow cooker, place the chicken thighs in the bottom.

    Make the Sauce: In a medium bowl, whisk together the hot honey, soy sauce, apple cider vinegar, minced garlic, smoked paprika, black pepper, onion powder, and salt until combined.

      Combine: Pour the sauce evenly over the chicken thighs, making sure they are well coated.

        Cook: Cover the slow cooker and set it to low heat. Cook for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shreds with a fork.

          Shred the Chicken: Once cooked, remove the chicken thighs from the slow cooker and shred them using two forks. Return the shredded chicken to the slow cooker and stir it into the sauce.

            Assemble the Sandwiches: Toast the burger buns lightly if desired. Scoop a generous amount of the hot honey chicken onto the bottom bun, top with a slice of cheddar cheese (if using), and add toppings like sliced pickles or coleslaw. Place the top bun over the fillings.
