Ingredients

2 lbs boneless, skinless chicken thighs

4 cups chicken broth

1 cup heavy cream

1 medium onion, diced

3 cloves garlic, minced

3 carrots, sliced

3 stalks celery, diced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon onion powder

1 teaspoon garlic powder

Salt and pepper, to taste

1 package (16 oz) refrigerated biscuit dough

1/4 cup fresh parsley, chopped (for garnish)

Instructions

Prepare the Chicken: Start by placing the chicken thighs at the bottom of the slow cooker. Season with salt, pepper, thyme, rosemary, onion powder, and garlic powder.

Add Vegetables: Next, layer the diced onion, garlic, carrots, and celery over the chicken in the slow cooker.

Pour Broth and Cream: Carefully pour in the chicken broth and heavy cream, ensuring the chicken and vegetables are completely covered.

Cook: Cover the slow cooker and set it on low heat. Let it cook for 6-8 hours or on high heat for 3-4 hours, until the chicken is tender and fully cooked.

Shred the Chicken: Once cooked, remove the chicken thighs from the slow cooker and shred them using two forks. Return the shredded chicken back to the slow cooker and stir to mix.

Add Dumplings: Tear the refrigerated biscuit dough into quarter-sized pieces and drop them into the slow cooker on top of the chicken mixture. Cover and cook on high for an additional 30-40 minutes, until dumplings are cooked through and fluffy.

Final Touches: Check the seasoning and adjust with more salt and pepper if necessary. Stir gently to incorporate the dumplings with the creamy chicken mixture.

Serve: Ladle into bowls, garnish with fresh parsley, and enjoy your comforting dish!
