2 cups frozen sweet corn

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 cup bell peppers, diced (mix of red and green)

1 medium onion, diced

2 cloves garlic, minced

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon oregano

1/4 teaspoon cayenne pepper (adjust to taste)

1 cup vegetable broth

1 cup shredded cheddar cheese (plus extra for topping)

1/2 cup sour cream (for serving)

Fresh cilantro, chopped (for garnish)

Prepare the Slow Cooker: Start by spraying the inside of your slow cooker with cooking spray to prevent sticking.

    Combine the Ingredients: In a large bowl, combine the frozen sweet corn, black beans, kidney beans, diced tomatoes (with their juice), diced bell peppers, diced onion, minced garlic, chili powder, cumin, smoked paprika, oregano, cayenne pepper, and vegetable broth. Mix well.

      Season the Mixture: Season the mixture with salt and pepper to taste, ensuring everything is well-coated with the spices.
