Slow Cooker Chicken Taco Soup

Ingredients
  

1 lb boneless, skinless chicken breasts

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 can (15 oz) tomato sauce

1 packet taco seasoning (about 1 oz)

1 medium onion, diced

2 cloves garlic, minced

1 cup chicken broth

1 bell pepper, diced (any color)

1 teaspoon cumin

Salt and pepper to taste

Optional toppings: shredded cheese, sour cream, avocado, fresh cilantro, tortilla chips

Instructions
 

Prepare the Chicken: Place the boneless, skinless chicken breasts at the bottom of your slow cooker.

    Add the Vegetables: Layer the diced onion, bell pepper, and minced garlic over the chicken.

      Mix the Beans and Corn: In a separate bowl, combine the black beans, corn, diced tomatoes with green chilies, and tomato sauce. Stir in the taco seasoning and cumin to blend the flavors.

        Combine Ingredients: Pour the bean mixture over the chicken and veggies in the slow cooker. Then, add the chicken broth, ensuring everything is nicely covered. Season with salt and pepper to taste.

          Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shreds with a fork.

            Shred the Chicken: Once cooked, carefully remove the chicken breasts and shred them using two forks. Return the shredded chicken to the slow cooker and stir until everything is well combined.

              Serve: Ladle the soup into bowls and let everyone add their favorite toppings such as shredded cheese, sour cream, diced avocado, fresh cilantro, or crushed tortilla chips for that perfect crunch.
