Slow Cooker Chicken Fajita Chili

1.5 lbs boneless, skinless chicken breasts

1 medium onion, diced

2 bell peppers (red and green), sliced

3 cloves garlic, minced

1 can (14.5 oz) fire-roasted diced tomatoes

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

2 cups low-sodium chicken broth

2 tbsp chili powder

1 tsp cumin

1 tsp smoked paprika

1 tsp dried oregano

Salt and pepper to taste

Optional toppings: avocado, shredded cheese, sour cream, cilantro, lime wedges

Instructions
 

Prepare the Chicken: Start by placing the chicken breasts in the bottom of the slow cooker. This will be the base for the chili.

    Add Vegetables: Layer the diced onion, sliced bell peppers, and minced garlic over the chicken.

      Pour in Tomatoes and Broth: Add the fire-roasted diced tomatoes, black beans, corn, and chicken broth over the vegetables.

        Season: Sprinkle the chili powder, cumin, smoked paprika, and dried oregano on top of the mixture. Season generously with salt and pepper to taste.

          Cook: Cover the slow cooker and set it on low for 6-8 hours or high for 3-4 hours, allowing the flavors to meld and the chicken to become tender.

            Shred the Chicken: Once cooked, remove the chicken breasts, shred them with two forks, and return the shredded chicken to the slow cooker. Stir to combine everything well.
