Slow Cooker Charcuterie Chili

Ingredients
  

1 lb ground beef (or turkey for a leaner option)

1 lb smoked sausage, sliced (e.g., kielbasa or andouille)

1 lb of chorizo, casing removed and crumbled

1 cup diced pancetta or prosciutto

1 large onion, diced

3 garlic cloves, minced

2 bell peppers, diced (any color)

2 (15 oz) cans of black beans, rinsed and drained

1 (15 oz) can of kidney beans, rinsed and drained

1 (15 oz) can of diced tomatoes with green chilies

2 cups beef broth

2 tablespoons chili powder

1 tablespoon ground cumin

1 tablespoon smoked paprika

1 tablespoon dried oregano

Salt and pepper to taste

Optional toppings: shredded cheddar cheese, sliced jalapeƱos, chopped green onions, sour cream, and crunchy croutons or breadsticks

Instructions
 

In a large skillet over medium-high heat, cook the ground beef or turkey until browned. Use a spatula to break it into small pieces. Drain any excess fat.

    Add the sliced smoked sausage and chorizo to the skillet. Cook until they are browned and slightly crisp. This should take about 5-7 minutes. Remove from heat.

      In your slow cooker, add the cooked meat mixture, diced pancetta or prosciutto, diced onions, minced garlic, and bell peppers. Stir to combine.

        Pour in the rinsed black beans and kidney beans, the can of diced tomatoes with green chilies, and the beef broth.

          Sprinkle the chili powder, ground cumin, smoked paprika, dried oregano, salt, and pepper over the top of the mixture. Stir everything together until evenly combined.

            Set the slow cooker to low and cook for 6-8 hours or high for 3-4 hours, until the flavors meld and the chili thickens.

              Serve hot, topped with your choice of shredded cheddar cheese, sliced jalapeƱos, chopped green onions, sour cream, and crunchy croutons or breadsticks for added texture.
