Slow Cooker Balsamic Chicken Thighs

4 bone-in, skin-on chicken thighs

1 cup balsamic vinegar

1/4 cup honey

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon onion powder

Salt and pepper to taste

1 tablespoon olive oil

1 red bell pepper, sliced

1 yellow onion, sliced

Fresh parsley for garnish

Prepare the Chicken: Pat the chicken thighs dry with paper towels and season both sides generously with salt and pepper.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken thighs, skin side down, and sear for about 4-5 minutes until browned. Flip and cook for another 3-4 minutes. Transfer the chicken to the slow cooker.

      Make the Sauce: In a medium bowl, whisk together the balsamic vinegar, honey, minced garlic, thyme, rosemary, and onion powder until well combined.

        Add Vegetables: Place the sliced red bell pepper and onion over the chicken thighs in the slow cooker.

          Combine and Cook: Pour the balsamic sauce over the chicken and vegetables, ensuring everything is evenly coated. Cover the slow cooker and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender and cooked through.

            Serve: Once done, remove the chicken thighs from the slow cooker and place them on a serving platter. Drizzle some of the cooking liquid over the chicken. Garnish with freshly chopped parsley.
