Skillet Lemon Herb Salmon with Asparagus

Ingredients
  

4 salmon fillets (6 oz each)

1 pound fresh asparagus, trimmed

3 tablespoons olive oil, divided

2 tablespoons lemon juice (freshly squeezed)

1 tablespoon lemon zest

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and black pepper to taste

Lemon slices for garnish

Fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Salmon:

    In a small bowl, whisk together 2 tablespoons of olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper. Place the salmon fillets in a shallow dish and pour the marinade over them. Let it marinate for at least 15 minutes while you prepare the asparagus.

      Prepare the Asparagus:

        Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the trimmed asparagus, seasoning with salt and pepper. Sauté for about 5-7 minutes until the asparagus is tender and bright green, tossing occasionally. Remove the asparagus from the skillet and set it aside on a plate.

          Cook the Salmon:

            In the same skillet, add the remaining marinade to the pan and then add the marinated salmon fillets skin-side down. Cook for about 4-5 minutes without moving them, allowing the skin to crisp up. Flip the fillets gently using a spatula and cook for an additional 3-4 minutes, or until the salmon is cooked through and flakes easily with a fork.

              Combine & Serve:

                Return the sautéed asparagus to the skillet with the salmon during the last 1-2 minutes of cooking just to warm them up. Remove from heat and garnish with fresh parsley and lemon slices.

                  Plate Your Dish:

                    Serve the salmon and asparagus immediately, drizzling with any remaining pan juices for extra flavor.
