2 medium bell peppers (any color), sliced into strips

1 medium red onion, sliced into wedges

1 cup cherry tomatoes, halved

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried Italian seasoning

1 teaspoon smoked paprika

½ teaspoon red pepper flakes (optional, for additional heat)

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Optional: ½ cup grated Parmesan cheese (for topping)

Instructions
 

Preheat Oven: Preheat your oven to 425°F (220°C).

    Prepare Vegetables: In a large mixing bowl, combine the sliced bell peppers, red onion, cherry tomatoes, and minced garlic. Drizzle with olive oil and sprinkle with Italian seasoning, smoked paprika, red pepper flakes, salt, and black pepper. Toss well to ensure the vegetables are evenly coated.

      Prepare Sausage: Place the Italian sausages on a large sheet pan. If desired, you can slice them in half lengthwise for more browning and to allow juices to infuse into the vegetables.
