4 large flour tortillas

1 cup shredded mozzarella cheese

1/2 cup ricotta cheese

1 medium tomato, sliced

1/4 cup fresh basil leaves, chopped

1/4 cup grated Parmesan cheese

2 tablespoons olive oil

Salt and pepper to taste

Balsamic glaze (for drizzling, optional)

Prepare the Filling: In a mixing bowl, combine the ricotta cheese, chopped basil, salt, and pepper. Mix well until the ingredients are fully incorporated.

    Assemble the Quesadillas: Lay one flour tortilla on a flat surface. Spread a generous layer of the ricotta mixture on one half of the tortilla. On the same half, layer slices of tomatoes and sprinkle mozzarella cheese and Parmesan on top.

      Fold and Cook: Fold the tortilla in half to cover the filling. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Carefully place the folded quesadilla in the skillet. Cook for about 3-4 minutes on one side until golden brown and the cheese has started to melt.

        Flip and Finish: Add another tablespoon of olive oil if necessary. Gently flip the quesadilla and cook for an additional 3-4 minutes on the other side until golden and crispy.
