3 medium-sized zucchinis

1 cup grated Parmesan cheese

1/2 cup olive oil

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Grill: Start by preheating your grill to medium-high heat (about 375-400°F/190-200°C). If using a grill pan, heat it on medium on the stovetop.

    Prepare the Zucchini: Wash the zucchinis under cold water and dry them with a towel. Cut them lengthwise into 1/4-inch thick slices.

      Make the Marinade: In a small bowl, combine the olive oil, garlic powder, oregano, salt, black pepper, and red pepper flakes. Mix well to create a marinade.

        Coat the Zucchini: Brush both sides of the zucchini slices generously with the olive oil marinade. Make sure they are well coated for a rich flavor.

          Grill the Zucchini: Place the zucchini slices on the preheated grill (or grill pan) in a single layer. Grill for about 3-4 minutes on each side or until you see nice grill marks and the zucchini is tender.

            Add Parmesan: Just before taking the zucchini off the grill, sprinkle a generous amount of grated Parmesan cheese over the slices. Close the grill lid for about 1 minute to allow the cheese to melt slightly.
