Ingredients

1 cup fig jam (store-bought or homemade)

4 large flour tortillas

1 cup goat cheese, crumbled (or cream cheese for a milder flavor)

1 cup shredded sharp cheddar cheese

2 tablespoons honey (optional, for drizzling)

Fresh arugula or spinach (for garnish)

1 tablespoon olive oil (for frying)

Pinch of salt

Freshly cracked black pepper (to taste)

Instructions

Prepare the Filling: In a medium bowl, mix the crumbled goat cheese with a pinch of salt and pepper. Set aside.

Assemble the Quesadillas: On two tortillas, spread a generous layer of fig jam over the surface. Sprinkle half of the goat cheese mixture evenly on top, followed by half of the shredded cheddar cheese. Place a second tortilla on top of each assembled quesadilla.

Heat the Pan: In a large skillet, heat the olive oil over medium heat.

Cook the Quesadillas: Once the oil is hot, carefully place one quesadilla in the skillet. Cook for about 2-3 minutes, or until the bottom is golden brown and crisp. Flip gently with a spatula and cook the other side for another 2-3 minutes, until it is golden and the cheese has melted.

Keep Warm: Remove the cooked quesadilla from the skillet and place it on a plate. Cover loosely with aluminum foil to keep warm as you repeat the cooking process with the remaining quesadilla.

Slice and Serve: Once all quesadillas are cooked, slice them into wedges. Arrange them on a serving platter. Drizzle with honey if desired, and garnish with fresh arugula or spinach for a contrast in color and flavor.

Enjoy: Serve warm and enjoy your Sweet & Savory Fig Jam Quesadillas as an appetizer, snack, or light meal!
