Simple Beef and Broccoli Stir-Fry in 30 Minutes

1 lb (450g) beef sirloin, thinly sliced against the grain

2 cups broccoli florets

2 tablespoons vegetable oil

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

ΒΌ cup soy sauce (low sodium)

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon water

1 teaspoon sesame oil

Salt and pepper to taste

Cooked rice, for serving

Prepare the Beef: In a medium bowl, mix the sliced beef with cornstarch, salt, and pepper. Let it marinate while you prep the vegetables (about 5 minutes).

    Blanch the Broccoli: In a pot of boiling salted water, blanch the broccoli florets for 1-2 minutes until vibrant green and just tender. Drain and immediately plunge into ice water to stop cooking. Drain again and set aside.

      Make the Sauce: In a small bowl, combine the soy sauce, oyster sauce, sesame oil, and water. Stir well and set aside.

        Stir-Fry the Beef: In a large skillet or wok, heat 1 tablespoon of vegetable oil over high heat. Add the marinated beef in a single layer. Stir-fry for about 2-3 minutes until browned and just cooked through. Remove the beef from the skillet and set aside.

          Cook the Aromatics: In the same skillet, add the remaining tablespoon of oil. Add the minced garlic and ginger, stirring for about 30 seconds until fragrant.

            Combine Everything: Add the blanched broccoli to the skillet. Stir-fry for another 2 minutes until heated through. Return the beef to the skillet. Pour the sauce over the beef and broccoli and toss to coat everything evenly. Cook for an additional minute until the sauce thickens slightly.

              Serve: Serve the beef and broccoli stir-fry over a bed of cooked rice. Enjoy your delicious meal!
