2 ripe bananas, mashed

2 cups heavy cream

1 cup whole milk

1/2 cup granulated sugar

2 teaspoons vanilla extract

2 teaspoons unflavored gelatin powder

3 tablespoons cold water

Pinch of salt

1/2 cup brown sugar (for caramel)

2 tablespoons unsalted butter (for caramel)

1/4 cup heavy cream (for caramel)

Sliced bananas and mint leaves for garnish (optional)

Instructions
 

Prepare the Gelatin: In a small bowl, sprinkle the gelatin over 3 tablespoons of cold water. Let it sit for about 5 minutes until it blooms.

    Heat the Dairy Mixture: In a saucepan over medium heat, combine the heavy cream, whole milk, granulated sugar, vanilla extract, and a pinch of salt. Stir occasionally until the mixture is just about to boil. Do not let it boil.

      Incorporate Gelatin: Remove the saucepan from heat and add the bloomed gelatin, stirring until it completely dissolves.

        Add Bananas: Stir in the mashed bananas until well combined.

          Pour into Molds: Carefully pour the mixture into individual serving glasses or molds. Allow them to cool slightly before covering with plastic wrap. Refrigerate for at least 4 hours, or until set.

            Make the Caramel Sauce: In a separate saucepan, melt the brown sugar over medium heat until it starts to bubble and changes to a golden color. Remove from heat and quickly stir in the butter and 1/4 cup of heavy cream. Be cautious as the mixture may bubble up. Stir until smooth. Let it cool slightly.

              Unmold Panna Cotta: Once the panna cotta is set, run a knife around the edge of the molds. If using glasses, you can also serve them directly. If unmolding, dip the molds briefly in warm water to loosen.

                Serve: Drizzle the caramel sauce over the panna cotta just before serving. Optionally, top with sliced bananas and a sprig of mint for garnish.
