8 oz spaghetti or fettuccine pasta

1 lb large shrimp, peeled and deveined

2 cups fresh spinach, washed and roughly chopped

1 cup cherry tomatoes, halved

4 cloves garlic, minced

1/4 cup unsalted butter

2 tbsp olive oil

1/2 cup chicken or vegetable broth

1/2 tsp red pepper flakes (adjust to taste)

Salt and pepper, to taste

1/2 cup freshly grated Parmesan cheese

Fresh basil leaves, for garnish (optional)

Zest of 1 lemon (optional)

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti or fettuccine according to package instructions until al dente. Drain, reserving about 1 cup of pasta water.

    Sauté Shrimp: In a large skillet over medium heat, add the olive oil and 2 tablespoons of butter. Once melted, add the minced garlic and sauté for about 30 seconds or until fragrant.
