4 medium zucchinis, spiralized into noodles (zoodles)

1 pound large shrimp, peeled and deveined

3 tablespoons butter

3 tablespoons olive oil

4 cloves garlic, minced

1/4 teaspoon red pepper flakes (adjust for spice preference)

Zest of 1 lemon

Juice of 1 lemon

1/4 cup white wine (or vegetable broth for a non-alcoholic option)

Salt and pepper, to taste

1/4 cup fresh parsley, chopped

Grated Parmesan cheese, for serving (optional)

Instructions
 

Prepare the Zoodles: Using a spiralizer, create noodles from the zucchinis and set them aside. If you don't have a spiralizer, you can use a vegetable peeler to create thin strips.

    Cook the Shrimp: In a large skillet, heat 1 tablespoon of butter and 1 tablespoon of olive oil over medium heat. Once hot, add the shrimp in a single layer. Season with salt and pepper. Cook for about 2-3 minutes on each side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

      Make the Sauce: In the same skillet, add the remaining butter and olive oil. Stir in the minced garlic and red pepper flakes, cooking for about 1 minute until fragrant (ensure not to burn the garlic).

        Add the Wine: Pour in the white wine (or broth) and let it simmer for about 2 minutes, allowing it to reduce slightly.

          Combine Zoodles and Shrimp: Add the zoodles to the skillet, tossing gently to coat them in the garlic sauce. Cook for 2-3 minutes, just until the zoodles are tender but not mushy. Return the cooked shrimp to the skillet, and stir in the lemon zest and juice.

            Serve: Remove from heat and toss in the chopped parsley. Adjust seasoning with additional salt and pepper if desired. Serve immediately, garnished with grated Parmesan cheese if using.
