Shrimp Rice Bowls with Mayo

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

2 teaspoons garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon chili powder

Salt and pepper to taste

For the Rice:

1 cup jasmine rice

2 cups water or low-sodium chicken broth

Pinch of salt

For the Mayo Sauce:

1/4 cup mayonnaise

1 tablespoon sriracha (adjust to taste)

1 teaspoon lime juice

1 teaspoon honey or agave syrup

Toppings:

1 avocado, sliced

1/2 cup shredded carrots

1/2 cup chopped cucumber

2 green onions, thinly sliced

Fresh cilantro for garnish

Lime wedges for serving

Instructions
 

Cook the Rice:

    In a medium saucepan, combine jasmine rice, water (or chicken broth), and a pinch of salt. Bring to a boil, then reduce the heat to low, cover, and let simmer for 15 minutes or until the rice is tender and the liquid is absorbed. Once done, fluff with a fork and set aside.

      Prepare the Shrimp:
