Shrimp Lettuce Wraps with Watermelon Glaze

For the Shrimp Filling:

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 teaspoon red pepper flakes (adjust to taste)

2 tablespoons soy sauce

1 tablespoon lime juice

1 tablespoon honey

For the Watermelon Glaze:

2 cups watermelon, diced

1 tablespoon rice vinegar

1 tablespoon honey

1 teaspoon sesame oil

Pinch of salt

For the Wraps:

1 head of butter or romaine lettuce, leaves separated

1/2 cup shredded carrots

1/2 cup cucumber, thinly sliced

1/4 cup chopped fresh cilantro

Lime wedges, for serving

Instructions
 

Prepare the Watermelon Glaze:

    - In a blender or food processor, combine the diced watermelon, rice vinegar, honey, sesame oil, and a pinch of salt. Blend until smooth. Strain the mixture through a fine-mesh sieve into a saucepan, discarding the pulp.

      - Over medium heat, bring the strained mix to a gentle simmer. Cook for about 10 minutes, or until the glaze thickens slightly. Remove from heat and let cool.

        Cook the Shrimp:

          - In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and ginger; sauté for about 1 minute until fragrant.

            - Add the shrimp, red pepper flakes, soy sauce, lime juice, and honey. Sauté for 4-6 minutes, or until the shrimp are cooked through and turn pink. Remove from heat.

              Assemble the Lettuce Wraps:

                - Take a lettuce leaf and fill it with a spoonful of the shrimp mixture. Top with shredded carrots, sliced cucumber, and chopped cilantro.

                  Finish with Watermelon Glaze:

                    - Drizzle the watermelon glaze generously over the assembled wraps.
