Seafood Alfredo Pasta

8 oz fettuccine pasta

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 tablespoons unsalted butter

1 tablespoon olive oil

1 garlic clove, minced

8 oz shrimp, peeled and deveined

8 oz scallops

1/2 cup peas (fresh or frozen)

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Sauté the Seafood: In a large skillet over medium-high heat, heat the olive oil and 1 tablespoon of butter. Add the shrimp and scallops, seasoning with salt and pepper. Sauté for about 3-4 minutes until the shrimp turns pink and the scallops are cooked through. Remove from the skillet and set aside.

      Make the Alfredo Sauce: In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant. Pour in the heavy cream and bring to a low simmer. Stir in the Parmesan cheese until melted and the sauce is creamy. If the sauce is too thick, add some of the reserved pasta water until desired consistency is reached.

        Combine Everything: Add the cooked fettuccine to the sauce, tossing to coat evenly. Stir in the cooked seafood and peas, mixing gently to combine. Adjust seasoning with salt and pepper to taste.

          Serve: Divide the pasta into serving bowls, garnishing with fresh parsley and a squeeze of lemon juice for brightness. Serve immediately with additional Parmesan cheese if desired.
