Savory Turkey and Sweet Potato Skillet

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 red bell pepper, chopped

1 small onion, diced

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

½ teaspoon dried oregano

½ teaspoon salt

¼ teaspoon black pepper

2 tablespoons olive oil

½ cup chicken or vegetable broth

2 cups fresh spinach

Fresh parsley, chopped for garnish

Optional: crumbled feta cheese for topping

Instructions
 

Cook the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes, sprinkle with salt and pepper, and cook for about 10 minutes, stirring occasionally, until they start to soften and turn golden brown. Remove from the skillet and set aside.

    Sauté the Aromatics: In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion and red bell pepper, and sauté for about 3-4 minutes, until the onion becomes translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

      Brown the Turkey: Push the sautéed vegetables to the side of the skillet and add the ground turkey. Cook until browned, breaking it up with a spatula, about 5-7 minutes. Drain excess fat if necessary.

        Season and Simmer: Sprinkle the turkey with smoked paprika, cumin, and oregano, mixing well. Add the reserved sweet potatoes back into the skillet along with the chicken or vegetable broth. Bring to a simmer, cover, and cook for about 5-7 minutes, allowing the flavors to meld.

          Add Spinach: Uncover the skillet, and stir in the fresh spinach. Cook for an additional 2-3 minutes until the spinach wilts and everything is heated through.

            Serve and Garnish: Taste and adjust seasoning if needed. Serve hot, garnished with chopped fresh parsley and, if desired, crumbled feta cheese for a zesty finish.
