4 large bell peppers (red, green, yellow, or orange)

1 lb ground turkey

2 cups fresh spinach, chopped

1 cup cooked quinoa (or rice)

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon olive oil

1 teaspoon dried oregano

1 teaspoon smoked paprika

1/2 teaspoon salt (or to taste)

1/2 teaspoon pepper (or to taste)

1 cup marinara sauce (plus extra for topping)

1/2 cup shredded mozzarella cheese (optional)

Fresh basil for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside with olive oil and set aside.

      Cook the Turkey Mixture:

        - In a large skillet, heat 1 teaspoon of olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent (about 3-4 minutes).

          - Add the ground turkey to the skillet and cook until browned and no longer pink, breaking it up with a spatula as it cooks (about 5-7 minutes).

            Add Spinach and Quinoa: Stir the chopped spinach into the cooked turkey mixture. Once wilted, mix in the cooked quinoa, oregano, smoked paprika, salt, and pepper. Pour in 1 cup of marinara sauce and stir well to combine. Remove from heat.

              Stuff the Peppers: Spoon the turkey and spinach mixture into each bell pepper, packing it in firmly. Place the stuffed peppers upright in a baking dish.

                Bake the Peppers:

                  - Pour a little extra marinara sauce over the top of each filled pepper for added flavor and moisture.

                    - Cover the baking dish with foil and bake in the preheated oven for 25 minutes.

                      - After 25 minutes, remove the foil and sprinkle shredded mozzarella cheese on top if using. Bake uncovered for an additional 10-15 minutes until the peppers are tender and the cheese is melted and bubbly.
