4 large bell peppers (any color)

1 lb ground turkey

2 cups fresh spinach, chopped

1 cup cooked quinoa (or rice)

1 medium onion, diced

2 cloves garlic, minced

1 cup diced tomatoes (canned or fresh)

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded mozzarella cheese (for topping)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven to 375°F (190°C).

    Prepare the bell peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside with olive oil and place them cut-side up in a baking dish.

      Cook the turkey filling: In a large skillet over medium heat, add the olive oil. Sauté the diced onions until translucent (about 5 minutes). Add the minced garlic and cook for an additional 1 minute.

        Add the turkey: Increase the heat to medium-high, and add the ground turkey to the skillet. Cook until browned and cooked through, breaking it apart with a spatula.

          Incorporate spinach and spices: Stir in the chopped spinach, diced tomatoes, cooked quinoa (or rice), Italian herbs, smoked paprika, salt, and pepper. Cook for about 3-4 minutes until the spinach has wilted and everything is combined.

            Stuff the peppers: Spoon the turkey and spinach mixture into each bell pepper, packing it lightly. Place the stuffed peppers upright in the baking dish.

              Add cheese: Top each filled pepper with shredded mozzarella cheese.

                Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly and the peppers are tender.

                  Garnish and serve: Remove the stuffed peppers from the oven. Let them cool for a few minutes, then garnish with chopped fresh parsley before serving.
