2 cups cooked jasmine rice (preferably day-old)

8 oz flank steak, thinly sliced

1 large onion, finely chopped

3 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon sesame oil

2 tablespoons vegetable oil

1 cup mixed vegetables (peas, carrots, corn)

2 large eggs, lightly beaten

2 green onions, sliced (for garnish)

Salt and pepper to taste

Preparation: If using freshly cooked rice, let it cool and dry out for at least 30 minutes to avoid mushiness.

    Marinate Beef: In a medium bowl, combine the sliced flank steak with 1 tablespoon of soy sauce and a pinch of pepper. Allow it to marinate for at least 15 minutes.

      Heat the Pan: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Once hot, add the marinated beef and stir-fry for 2-3 minutes until browned. Remove the beef from the pan and set aside.

        Sauté Onions and Garlic: In the same pan, add another tablespoon of vegetable oil. Sauté the chopped onion until translucent (about 3-4 minutes). Add in the minced garlic and cook for another minute until fragrant.

          Add Mixed Vegetables: Toss in the mixed vegetables and stir-fry for about 2 minutes until they are heated through.
