Ingredients

1 cup long-grain white rice

2 cups low-sodium vegetable broth

2 cups fresh broccoli florets (or frozen)

1 cup shredded sharp cheddar cheese

1/2 cup cream cheese, softened

1 cup milk (or plant-based alternative)

1 medium onion, diced

2 cloves garlic, minced

1 teaspoon paprika

1/2 teaspoon black pepper

1 teaspoon salt (adjust to taste)

1 tablespoon olive oil or butter

1/2 cup breadcrumbs (optional, for topping)

1/4 cup grated Parmesan cheese (optional, for topping)

Instructions

Prepare the veggies: In a large pot, heat the olive oil or butter over medium heat. Once hot, add the diced onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and sauté for an additional 1 minute until fragrant.

Toast the rice: Stir in the rice to coat it with the oil and veggies, cooking for about 2 minutes to lightly toast the rice.

Add liquids and spices: Pour in the vegetable broth, milk, salt, black pepper, and paprika. Bring the mixture to a boil, then reduce the heat to low and cover. Let it simmer for about 15 minutes.

Incorporate broccoli: After 15 minutes, add the broccoli florets into the pot, stirring to combine. Cover and cook for an additional 5 minutes until the rice and broccoli are tender.

Create the cheese sauce: Remove the pot from heat and add the softened cream cheese and shredded cheddar cheese. Stir until the cheeses are completely melted and incorporated, creating a creamy mixture.

Optional breadcrumbs topping: If using breadcrumbs, mix them with grated Parmesan cheese in a small bowl, then sprinkle over the casserole. Optionally, you can broil the casserole for 2-3 minutes to achieve a golden-brown topping.

Serve: Allow the casserole to sit for about 5 minutes to set slightly before serving. Enjoy your cheesy, savory dish hot!
