Ingredients

1 pound ground beef (80/20 blend for optimal juiciness)

1 cup mushrooms, finely chopped (preferably cremini or shiitake)

1 small onion, finely diced

2 cloves garlic, minced

1 tablespoon soy sauce

1 teaspoon Worcestershire sauce

1 teaspoon dried thyme

Salt and pepper to taste

4 slices Swiss cheese

4 whole wheat burger buns

2 tablespoons olive oil (for cooking)

Fresh arugula or spinach (for topping)

Sliced tomatoes (optional)

Mayonnaise or your favorite burger sauce (for serving)

Instructions

Cook the Mushrooms: In a medium skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the chopped mushrooms, stirring frequently for about 5-7 minutes until they release their moisture and become golden brown. Add the diced onion and minced garlic, cooking for an additional 3-4 minutes until the onion is translucent. Remove from heat and stir in the soy sauce, Worcestershire sauce, and dried thyme. Let the mixture cool slightly.

Prepare the Patties: In a large mixing bowl, combine the ground beef with the cooled mushroom mixture. Season with salt and pepper, mixing gently but thoroughly to avoid overworking the meat. Divide the mixture into four equal portions and shape them into patties, ensuring they are slightly larger than the buns as they will shrink while cooking.

Cook the Patties: In the same skillet used for the mushrooms, heat the remaining tablespoon of olive oil over medium-high heat. Add the burger patties and cook for about 4-5 minutes per side (for medium doneness), adding a slice of Swiss cheese on top of each patty during the last minute of cooking. Cover the skillet briefly to melt the cheese.

Toast the Buns: While the burgers are cooking, cut the whole wheat buns in half and toast them in a separate skillet or toaster until golden brown.

Assemble the Burgers: Once the patties are cooked and the cheese is melted, place each patty on the bottom half of a toasted bun. Top with fresh arugula or spinach and sliced tomatoes if desired. Add mayonnaise or your favorite burger sauce, then place the top bun on each burger.

Serve: Serve the burgers immediately while hot, accompanied by your favorite sides like sweet potato fries or a crisp salad.
