Savory Ground Turkey and Sweet Potato Skillet

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 medium onion, chopped

3 cloves garlic, minced

1 bell pepper (any color), diced

1 teaspoon smoked paprika

1 teaspoon ground cumin

½ teaspoon chili powder

Salt and pepper, to taste

2 tablespoons olive oil

1 cup spinach leaves (fresh or frozen)

¼ cup chicken broth (or water)

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and season with salt and pepper. Cook for about 10-12 minutes, stirring occasionally, until the sweet potatoes are tender and slightly caramelized. Remove them from the skillet and set aside.

    Cook the Turkey: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and bell pepper, and sauté for 4-5 minutes until they start to soften. Then, add the minced garlic and cook for an additional minute until fragrant.

      Add the Ground Turkey: Increase the heat to medium-high and add the ground turkey to the skillet. Break it apart with a spatula and cook until browned, about 5-7 minutes. Drain any excess fat if necessary.

        Season the Mixture: Stir in the smoked paprika, ground cumin, chili powder, and a dash of salt and pepper. Mix well to combine all the flavors.
