Savory Cabbage and Onion Fritters

2 cups green cabbage, finely shredded

1 medium onion, finely chopped

1 cup all-purpose flour

1/2 cup cornmeal

1 tsp baking powder

1/2 tsp baking soda

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

1/4 tsp cayenne pepper (optional, for heat)

1 tsp salt

1/2 tsp black pepper

1/4 cup parsley, finely chopped

2 large eggs, beaten

1/2 cup milk

Prep the Vegetables: In a large mixing bowl, combine the finely shredded cabbage and chopped onion. You can sprinkle a pinch of salt over them to draw out moisture, which will help in making the fritters crispier. Let them sit for about 10 minutes, then squeeze out excess moisture.

    Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, cornmeal, baking powder, baking soda, garlic powder, onion powder, paprika, cayenne pepper (if using), salt, and black pepper.

      Combine Ingredients: Fold the dry mixture slowly into the cabbage and onion mixture. Add the chopped parsley for added flavor and freshness.

        Add Wet Ingredients: In a smaller bowl, beat the eggs and mix them with the milk. Pour this wet mixture into the cabbage and flour combination. Stir until just combined. The batter should be thick enough to hold its shape but still pourable.
