1 pound (450g) beef sirloin, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon cornstarch

2 tablespoons vegetable oil, divided

1 red bell pepper, sliced

1 cup snap peas, trimmed

1 carrot, julienned

3 green onions, chopped

2 cloves garlic, minced

1-inch piece of ginger, grated

2 tablespoons oyster sauce

2 tablespoons hoisin sauce

Cooked rice or noodles, for serving

Sesame seeds (optional, for garnish)

Marinate the Beef: In a medium bowl, combine the thinly sliced beef, soy sauce, sesame oil, and cornstarch. Toss well to coat and let it marinate for about 10 minutes while you prepare the vegetables.

    Prep the Veggies: Wash and slice the bell pepper, snap peas, carrot, and green onions. Mince the garlic and grate the ginger.

      Heat the Pan: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat until shimmering.

        Cook the Beef: Add the marinated beef to the hot skillet in a single layer. Let it sear for about 2-3 minutes without stirring, then stir-fry it for another 2 minutes until browned and cooked through. Remove the beef from the skillet and set aside.

          Sauté the Veggies: In the same skillet, add the remaining tablespoon of oil. Add minced garlic and grated ginger; sauté for about 30 seconds until fragrant. Toss in the sliced bell pepper, carrot, and snap peas, and stir-fry for about 2-3 minutes until they are tender-crisp.

            Combine and Sauce: Return the cooked beef to the skillet with the veggies. Add the oyster sauce and hoisin sauce, stirring well to combine all the ingredients. Cook for another minute to heat everything through and allow the sauce to coat the ingredients nicely.

              Garnish and Serve: Remove from heat, sprinkle with green onions and sesame seeds if using. Serve hot over cooked rice or noodles.
