1 lb (450g) beef sirloin, thinly sliced against the grain

2 cups broccoli florets

1 bell pepper (any color), sliced into strips

1 medium carrot, julienned

1 cup snap peas, trimmed

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon cornstarch

3 tablespoons soy sauce (low-sodium recommended)

1 tablespoon oyster sauce

1 tablespoon sesame oil

2 tablespoons vegetable oil (divided)

Salt and pepper to taste

Cooked rice or noodles, for serving

Optional: sesame seeds and sliced green onions for garnish

Prep the Ingredients: Begin by preparing all your vegetables. Slice the beef sirloin thinly against the grain and place it in a bowl.

    Marinate the Beef: In the bowl with sliced beef, add the cornstarch, 1 tablespoon of soy sauce, and a pinch of salt and pepper. Mix well to coat the beef evenly. Let this marinate while you prepare the vegetables, about 5 minutes.

      Heat the Wok/Pan: In a large wok or a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat.

        Cook the Beef: Once the oil is hot, add the marinated beef in a single layer (you may need to do this in batches) and sear for about 2-3 minutes until browned but not fully cooked. Remove the beef from the pan and set aside.

          Sauté the Vegetables: In the same pan, add the remaining tablespoon of vegetable oil. Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant. Then, add the broccoli, bell pepper, carrot, and snap peas. Stir-fry for 4-5 minutes until the vegetables are vibrant and just tender, but still crisp.

            Combine Everything: Return the beef to the pan with the vegetables. Add the remaining soy sauce, oyster sauce, and sesame oil. Toss everything together and cook for an additional 2-3 minutes until the beef is cooked through.
