Ingredients

1 lb beef sirloin, thinly sliced

2 tablespoons soy sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 red bell pepper, sliced

1 cup broccoli florets

1 carrot, julienned

1 cup snap peas

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

2 tablespoons oyster sauce

1 tablespoon sesame oil

Salt and pepper to taste

2 green onions, chopped (for garnish)

Cooked rice or noodles (for serving)

Instructions

Marinate the Beef: In a medium bowl, combine the sliced beef with soy sauce and cornstarch. Mix well and let it marinate for 10 minutes while you prepare the vegetables.

Prepare the Vegetables: Wash and slice the red bell pepper, trim the broccoli into florets, julienne the carrot, and rinse the snap peas. Set all the vegetables aside.

Heat the Pan: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat until it shimmers.

Cook the Beef: Add the marinated beef to the pan in a single layer, cooking for about 2-3 minutes without stirring, until it’s browned. Stir-fry for another minute until fully cooked. Transfer the beef to a plate and set aside.

Stir-Fry the Vegetables: In the same pan, add the remaining tablespoon of vegetable oil. Add the minced garlic and ginger, stirring quickly until fragrant (about 30 seconds). Then, toss in the red bell pepper, broccoli, carrot, and snap peas. Stir-fry for about 4-5 minutes, until the vegetables are tender-crisp.

Combine Everything: Return the beef to the pan with the vegetables. Add oyster sauce, sesame oil, salt, and pepper. Stir everything together, cooking for another 2 minutes until heated through.

Serve: Remove the stir-fry from the heat. Garnish with chopped green onions. Serve immediately over cooked rice or noodles.
