1 pound ground beef

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup bell peppers (mixed colors), diced

1 cup zucchini, diced

1 cup frozen corn (or fresh if available)

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon smoked paprika

Salt and pepper to taste

2 cups shredded cheddar cheese (or a cheese blend)

8 large flour tortillas

2 tablespoons olive oil

Fresh cilantro, chopped (for garnish)

Sour cream and salsa (for serving)

Instructions
 

Cook the Beef: In a large skillet over medium heat, add the olive oil. Once hot, add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.

    Add Aromatics: To the skillet with the beef, add the chopped onion and minced garlic. Sauté for 3-4 minutes until the onion is translucent.

      Incorporate Vegetables: Add the diced bell peppers, zucchini, and frozen corn to the skillet. Stir well and cook for another 5-6 minutes until the vegetables are tender.
