1 lb (450g) beef sirloin, thinly sliced against the grain

2 cups broccoli florets (fresh or frozen)

1 red bell pepper, sliced

3 cloves garlic, minced

1 inch piece of fresh ginger, minced

3 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon vegetable oil (for frying)

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon sugar

Salt and pepper to taste

Cooked rice, for serving

Sesame seeds and sliced green onions, for garnish

Instructions
 

Marinate the Beef: In a bowl, combine the sliced beef with 1 tablespoon of soy sauce, cornstarch, and a pinch of salt and pepper. Let it marinate for at least 15 minutes to tenderize the meat.

    Prepare the Stir-Fry Sauce: In a small bowl, mix the remaining soy sauce, oyster sauce, rice vinegar, sesame oil, and sugar. Set aside.

      Blanch the Broccoli: Bring a pot of water to boil, and add the broccoli florets. Cook for 1-2 minutes until bright green and tender-crisp. Drain and run under cold water to stop the cooking. Set aside.

        Cook the Beef: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the marinated beef in a single layer. Stir-fry for 2-3 minutes until the beef is browned and just cooked through. Remove the beef from the pan and set aside.

          Stir-Fry the Vegetables: In the same skillet, add the minced garlic and ginger, and sauté for about 30 seconds until fragrant. Add the sliced red bell pepper and blanched broccoli. Stir-fry for 2-3 minutes until the vegetables are tender but still crisp.
