Ingredients

4 (6 oz) salmon fillets, skin-on

½ cup grated Parmesan cheese

½ cup panko breadcrumbs

3 cloves garlic, minced

¼ cup fresh parsley, chopped

2 tablespoons melted butter

1 tablespoon olive oil

1 teaspoon lemon zest

Salt and pepper, to taste

Lemon wedges, for serving

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Salmon: Place the salmon fillets skin-side down on the prepared baking sheet. Pat the fillets dry with a paper towel and season with salt and pepper.

Make the Crust Mixture: In a medium bowl, combine the grated Parmesan cheese, panko breadcrumbs, minced garlic, chopped parsley, melted butter, olive oil, lemon zest, and a pinch of salt and pepper. Mix well until all ingredients are evenly coated.

Apply the Crust: Spoon the garlic Parmesan mixture generously over each salmon fillet, pressing it down gently to ensure it adheres well.

Bake: Place the baking sheet in the preheated oven and bake for about 15-20 minutes, or until the salmon is cooked through and the crust is golden and crispy. The salmon should flake easily with a fork.

Serve: Remove the salmon from the oven and let it rest for a couple of minutes. Serve hot with lemon wedges on the side for drizzling.
