Ingredients

1 small head of green cabbage, finely shredded

1 lb ground turkey

1 medium onion, diced

3 cloves garlic, minced

1 medium carrot, grated

2 tablespoons olive oil

1 tablespoon soy sauce (or tamari for gluten-free)

1 teaspoon smoked paprika

½ teaspoon black pepper

½ teaspoon salt (adjust to taste)

½ teaspoon red pepper flakes (optional for heat)

2 tablespoons apple cider vinegar

Fresh parsley, chopped for garnish

Instructions

Prep the Ingredients: Start by finely shredding the cabbage, dicing the onion, and mincing the garlic. Grate the carrot and set all the ingredients aside.

Cook the Turkey: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground turkey and cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain any excess fat if necessary.

Sauté the Aromatics: Add the diced onion to the skillet with the cooked turkey. Sauté for about 3-4 minutes, or until the onion becomes translucent. Then, stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

Add the Vegetables: Incorporate the shredded cabbage and grated carrot into the skillet. Pour in the soy sauce, and sprinkle with smoked paprika, black pepper, salt, and red pepper flakes if using.

Cook Until Tender: Stir everything together and cook for an additional 8-10 minutes, stirring occasionally, until the cabbage is tender and begins to wilt. If you prefer your cabbage with a bit more crunch, you can reduce the cooking time.

Add the Finish Touch: Drizzle the apple cider vinegar over the mixture and give it a good stir. This will enhance the flavors and add a nice tang.

Serve: Remove from heat and transfer to serving plates. Garnish with chopped fresh parsley before serving. Enjoy your savory sautéed cabbage and turkey skillet hot!
