Salmon with Fresh Mango Salsa

For the Salmon:

4 salmon fillets (approximately 6 oz each)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

Juice of 1 lime

Fresh cilantro, for garnish (optional)

For the Mango Salsa:

1 ripe mango, diced

1/2 red onion, finely chopped

1 jalapeño, minced (seeds removed for less heat, if desired)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt, to taste

Marinate the Salmon: In a small bowl, mix the olive oil, garlic powder, smoked paprika, lime juice, salt, and pepper. Place the salmon fillets in a shallow dish and coat them with the marinade. Let them marinate for at least 15 minutes while you prepare the salsa.

    Prepare the Mango Salsa: In a medium bowl, combine the diced mango, red onion, jalapeño, and cilantro. Squeeze fresh lime juice over the mixture and add salt to taste. Gently toss everything together and set aside to allow the flavors to meld.
