Salmon Skewers with Blueberry Salsa

For the Salmon Skewers:

1 pound salmon fillet, skinless and boneless, cut into 1-inch cubes

2 tablespoons olive oil

1 tablespoon fresh lemon juice

2 teaspoons garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes)

For the Blueberry Salsa:

1 cup fresh blueberries, roughly chopped

1 medium jalapeño, seeds removed and finely chopped

1/4 cup red onion, finely diced

1 avocado, diced

1 tablespoon cilantro, chopped

2 tablespoons lime juice

Salt and pepper to taste

Prepare the Salmon Marinade:

    In a bowl, combine olive oil, lemon juice, garlic powder, smoked paprika, salt, and pepper. Mix well to create the marinade.

      Marinate the Salmon:

        Add the cubed salmon to the marinade and gently toss to coat all sides. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes.

          Make the Blueberry Salsa:

            In another bowl, combine the chopped blueberries, jalapeño, red onion, avocado, and cilantro. Pour lime juice over the mixture, then season with salt and pepper to taste. Gently toss to combine, and set aside.

              Assemble the Skewers:

                Preheat your grill to medium-high heat. Remove the salmon from the marinade and thread the cubed salmon onto the skewers. Leave a bit of space between each piece to ensure even cooking.

                  Grill the Salmon Skewers:

                    Place the salmon skewers on the preheated grill. Cook for about 3-4 minutes on each side or until the salmon is cooked through and has nice grill marks. Remove from the grill and let them rest for a couple of minutes.

                      Serve:
