Salmon Patties with Lemon Garlic Sauce

For the Salmon Patties:

1 lb (450g) fresh or canned salmon, skinless and boneless

1/2 cup breadcrumbs (panko for extra crunch)

1/4 cup finely chopped green onions

1/4 cup finely chopped bell pepper (red or yellow for color)

2 cloves garlic, minced

1 large egg, lightly beaten

1 tablespoon Dijon mustard

1 teaspoon Worcestershire sauce

1 teaspoon lemon zest

Salt and pepper to taste

2 tablespoons olive oil (for frying)

For the Lemon Garlic Sauce:

1/2 cup Greek yogurt or sour cream

2 tablespoons mayonnaise

1 tablespoon fresh lemon juice

1 clove garlic, minced

1 teaspoon lemon zest

Salt and pepper to taste

Fresh parsley or dill, chopped (for garnish)

Instructions
 

Prepare the Salmon Mixture:

    - In a large bowl, flake the salmon using a fork. If using canned salmon, ensure to remove any bones or skin.

      - Add breadcrumbs, green onions, bell pepper, garlic, beaten egg, Dijon mustard, Worcestershire sauce, lemon zest, salt, and pepper to the bowl. Mix until well combined.

        Form the Patties:

          - With your hands, shape the salmon mixture into patties, about 2-3 inches in diameter and 1 inch thick. You should have around 8 patties. Place them on a platter or tray.

            Chill the Patties:

              - Cover the patties with plastic wrap and refrigerate for at least 30 minutes. This will help them hold their shape while cooking.

                Prepare the Lemon Garlic Sauce:

                  - In a small bowl, whisk together Greek yogurt (or sour cream), mayonnaise, lemon juice, garlic, lemon zest, salt, and pepper until smooth. Adjust seasoning as desired. Set aside.

                    Cook the Patties:

                      - In a large skillet, heat olive oil over medium heat. Once heated, add the chilled salmon patties (in batches if necessary to avoid overcrowding).

                        - Cook for about 4-5 minutes on each side or until golden brown and crispy. Use a spatula to carefully flip them.

                          Serve:

                            - Once cooked, transfer the salmon patties to a paper towel-lined plate to drain excess oil.
