4 medium zucchinis, sliced into half-moons

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon dried thyme

1/2 teaspoon smoked paprika

Salt and pepper, to taste

Zest of 1 lemon

Fresh parsley, chopped, for garnish

Grated Parmesan cheese (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

    Prepare Zucchini: In a large mixing bowl, combine the sliced zucchinis.

      Season: Drizzle the olive oil over the zucchini slices and add garlic powder, onion powder, oregano, thyme, smoked paprika, salt, and pepper. Toss everything together until all the zucchini pieces are well-coated with the oil and spices.

        Arrange on Baking Sheet: Spread the seasoned zucchini in a single layer on the prepared baking sheet. Make sure they are not overlapping to allow for even roasting.

          Roast: Place the baking sheet in the preheated oven and roast for about 20-25 minutes, or until the zucchini is golden brown and tender. Stir halfway through cooking to ensure even roasting.
