Ingredients

4 large whole wheat tortillas

1 cup hummus (store-bought or homemade)

1 cup roasted vegetables (zucchini, bell peppers, and carrots)

1/2 cup fresh spinach leaves

1/4 cup feta cheese, crumbled (optional)

1/4 cup olives, sliced (optional)

1 tsp olive oil

Salt and pepper to taste

1 tsp paprika (for garnish)

Fresh basil leaves for garnish (optional)

Instructions

Prepare the Roasted Vegetables:

    - Preheat your oven to 400°F (200°C).

      - Chop the zucchini, bell peppers, and carrots into bite-sized pieces.

        - Spread them on a baking sheet, drizzle with olive oil, and season with salt, pepper, and a pinch of paprika.

          - Roast the vegetables for about 20-25 minutes until they are tender and slightly caramelized. Let cool.

            Prepare the Tortillas:

              - Lay out the whole wheat tortillas on a clean cutting board or surface.

                - Spread about 1/4 cup of hummus evenly on each tortilla, leaving a small border around the edges.

                  Layer the Fillings:

                    - Sprinkle a handful of fresh spinach leaves over the hummus on each tortilla.

                      - Distribute the roasted vegetables evenly among the tortillas.

                        - If desired, add crumbled feta cheese and sliced olives on top of the veggies for added flavor.

                          Roll the Tortillas:

                            - Starting from one end, carefully roll the tortilla tightly towards the opposite end, ensuring the fillings stay inside.

                              - Once rolled, you can secure the ends slightly to avoid any fillings falling out.

                                - If needed, you can use toothpicks to hold the roll together.

                                  Slice and Serve:

                                    - Using a sharp knife, slice each rolled tortilla into bite-sized pinwheels (about 1-inch thick).

                                      - Arrange the pinwheels on a serving platter.

                                        - Drizzle lightly with olive oil, sprinkle with paprika, and garnish with fresh basil leaves if desired.

                                          Enjoy:

                                            - Serve immediately as a delicious appetizer or light meal, or refrigerate for later use.
