Roasted Salmon and Broccoli

Ingredients
  

4 salmon fillets (about 6 oz each)

1 large head of broccoli, cut into florets

3 tablespoons olive oil

2 tablespoons fresh lemon juice

Zest of 1 lemon

2 cloves garlic, minced

1 teaspoon dried dill (or 1 tablespoon fresh dill, chopped)

Salt and pepper to taste

Lemon wedges, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

    Prepare the Marinade: In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, dried dill, salt, and pepper until well combined.

      Marinate the Salmon: Place the salmon fillets on one half of the prepared baking sheet. Brush each fillet generously with the marinade. Reserve any remaining marinade for the broccoli.

        Prepare the Broccoli: Toss the broccoli florets on the other half of the baking sheet with the reserved marinade. Ensure they are evenly coated and season with additional salt and pepper if desired.

          Roast in the Oven: Transfer the baking sheet to the preheated oven. Roast for 15-20 minutes, or until the salmon flakes easily with a fork and the broccoli is tender and slightly crispy.
