Roasted Red Pepper Chickpea Wraps

1 can (15 oz) chickpeas, drained and rinsed

2 medium roasted red peppers (jarred or homemade)

2 tablespoons tahini

1 tablespoon olive oil

1 tablespoon lemon juice

1 teaspoon garlic powder

½ teaspoon ground cumin

Salt and pepper to taste

4 large whole grain or spinach tortillas

1 cup spinach leaves (fresh)

½ cup shredded carrots

¼ cup red onion, thinly sliced

Optional: crumbled feta cheese or avocado slices for topping

Instructions
 

Prep the Chickpea Mixture: In a large mixing bowl, mash the drained chickpeas with a fork or potato masher until a chunky paste forms. You don’t want it completely smooth—some texture adds to the wraps.

    Blend the Roasted Peppers: In a food processor, combine the roasted red peppers, tahini, olive oil, lemon juice, garlic powder, cumin, and a pinch of salt and pepper. Blend until smooth and creamy.

      Combine Ingredients: Add the roasted pepper mixture to the mashed chickpeas. Mix thoroughly until all ingredients are well incorporated. Taste and adjust seasoning with more salt, pepper, or lemon juice if desired.

        Prepare the Wraps: Lay out the whole grain or spinach tortillas on a clean surface. Place a layer of fresh spinach leaves in the center of each tortilla.

          Add the Filling: Spoon about a quarter of the chickpea and roasted pepper mixture onto each tortilla, then sprinkle with shredded carrots and red onion slices. If using, add crumbled feta cheese or avocado slices on top.

            Wrap It Up: Fold the sides of the tortilla inward, then roll from the bottom up to create a tight wrap.

              Optional Toasting: If preferred, place the wraps seam-side down in a skillet over medium heat and toast for about 2 minutes on each side until golden brown and heated through.

                Slice and Serve: Cut each wrap in half diagonally and serve with a side of your favorite dipping sauce or a simple green salad.
