2 large sweet potatoes (about 2 pounds), peeled and cubed

1 whole head of garlic

2 tablespoons olive oil

4 tablespoons unsalted butter

½ cup whole milk (or heavy cream for extra creaminess)

Salt and pepper to taste

Fresh chives or parsley for garnish (optional)

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Cut the top off the head of garlic to expose the cloves. Drizzle with 1 tablespoon of olive oil and wrap it in aluminum foil. Place it on a baking sheet and roast for about 30-35 minutes until the cloves are soft and golden.

    Prepare the Sweet Potatoes: While the garlic is roasting, place the cubed sweet potatoes in a large pot and cover them with water. Bring to a boil over medium-high heat. Once boiling, reduce heat and simmer until the sweet potatoes are tender, about 15-20 minutes.

      Drain and Mash: Drain the sweet potatoes and return them to the pot. Allow them to cool for a few minutes.

        Combine Ingredients: Squeeze the roasted garlic cloves into the pot with the sweet potatoes (discard the skins). Add the remaining tablespoon of olive oil, butter, milk (or cream), and season with salt and pepper to taste.

          Mash It Up: Using a potato masher or a fork, mash everything together until creamy and smooth. If you desire a lighter texture, you can use a hand mixer for a fluffier result.
