Roasted Garlic Mashed Potatoes

2 pounds Yukon Gold potatoes, peeled and cut into chunks

1 head of garlic

½ cup unsalted butter (1 stick), at room temperature

1 cup heavy cream (or milk for a lighter version)

Salt, to taste

Freshly ground black pepper, to taste

Chopped fresh parsley, for garnish (optional)

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Cut the top off the head of garlic to expose the cloves. Drizzle with a little olive oil, wrap in aluminum foil, and roast for about 30-35 minutes, or until the cloves are soft and golden. Once done, remove from the oven and let cool slightly.

    Cook the Potatoes: While the garlic is roasting, place the cut potatoes into a large pot and cover them with cold water. Add a pinch of salt. Bring to a boil over high heat, then reduce the heat to a simmer. Cook for about 15-20 minutes, or until the potatoes are fork-tender.

      Drain and Dry: Drain the potatoes in a colander and let them sit for a minute to allow any excess moisture to evaporate.

        Peel the Garlic: Once cool enough to handle, squeeze the roasted garlic cloves out of their skins into a small bowl.

          Mash: In a large mixing bowl, combine the hot potatoes and roasted garlic. Using a potato masher or ricer, mash until smooth.

            Incorporate Butter and Cream: Add the room temperature butter, and gradually pour in the heavy cream while continuing to mix until fully combined and the desired consistency is reached. Season with salt and freshly ground black pepper to taste.
