2 pounds baby Yukon gold potatoes, halved

1 head of garlic, roasted

1/2 cup unsalted butter, melted

2 tablespoons fresh rosemary, finely chopped

2 tablespoons fresh thyme, finely chopped

1 tablespoon fresh parsley, finely chopped

1 teaspoon salt

1/2 teaspoon black pepper

Zest of 1 lemon

Juice of 1/2 lemon

Preheat the Oven: Begin by preheating your oven to 425°F (220°C).

    Prepare the Garlic: To roast the garlic, slice the top off the head of garlic, drizzle with olive oil, wrap it in aluminum foil, and place it in the oven for about 30-35 minutes until it's soft and golden. Once done, let it cool slightly, then squeeze the cloves out into a small bowl.

      Mix Garlic Herb Butter: In the bowl with roasted garlic, add the melted butter, chopped rosemary, thyme, parsley, salt, black pepper, lemon zest, and lemon juice. Use a fork to mash the roasted garlic and blend all the ingredients together until smooth and well combined.

        Prepare the Potatoes: In a large mixing bowl, add the halved baby potatoes. Pour the garlic herb butter mixture over the potatoes, and toss them until they are evenly coated.
