Roasted Garlic Avocado Potato Toast

2 medium-sized russet potatoes, scrubbed clean

4 cloves of garlic

2 tablespoons olive oil

Salt, to taste

Freshly cracked black pepper, to taste

1 ripe avocado

1 tablespoon lemon juice

1 tablespoon fresh parsley, chopped

1/4 teaspoon red pepper flakes (optional)

Sourdough or whole-grain bread, for toasting

Microgreens, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Potatoes: Cut the russet potatoes into 1/4-inch slices. In a bowl, toss the potato slices with 1 tablespoon of olive oil, salt, and black pepper.

      Roast the Potatoes: Spread the potato slices in a single layer on a baking sheet lined with parchment paper. Place the whole garlic cloves (with skins on) on the tray as well. Roast in the preheated oven for about 25-30 minutes, flipping the potatoes halfway through, until golden brown and crispy.

        Prepare the Avocado Spread: While the potatoes are roasting, scoop the avocado into a bowl. Add lemon juice and a pinch of salt and mash with a fork until smooth and creamy.

          Squeeze the Garlic: Once the garlic is roasted and cool enough to handle, squeeze the roasted garlic out of the skins into the mashed avocado. Mix well to incorporate the roasted garlic into the avocado spread.

            Toast the Bread: Lightly brush the sourdough or whole-grain bread with the remaining 1 tablespoon of olive oil, then toast it in a skillet over medium heat until golden brown on both sides.
