Roasted Cherry Tomato Pasta

2 cups cherry tomatoes, halved

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon balsamic vinegar

Salt and pepper, to taste

12 oz spaghetti or your pasta of choice

1 teaspoon red pepper flakes (optional)

1/2 cup fresh basil, torn

1/2 cup grated Parmesan cheese

Zest of 1 lemon

Juice of 1/2 lemon

Preheat Oven: Preheat your oven to 400°F (200°C).

    Roast Tomatoes: In a large bowl, toss the halved cherry tomatoes with 2 tablespoons of olive oil, minced garlic, balsamic vinegar, salt, and pepper. Spread the mixture onto a baking sheet in a single layer. Roast in the oven for 20-25 minutes, or until the tomatoes are blistered and caramelized.

      Cook Pasta: While the tomatoes are roasting, bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the remaining water.

        Combine: In a large skillet over medium heat, add the remaining tablespoon of olive oil and the red pepper flakes (if using). Once hot, add the roasted tomatoes and their juices along with the cooked pasta. Toss everything together, adding reserved pasta water a little at a time until you reach your desired sauce consistency.

          Finish: Stir in the fresh basil, Parmesan cheese, lemon zest, and lemon juice. Mix well to combine all flavors, and adjust seasoning with more salt and pepper if necessary.

            Serve: Plate your roasted cherry tomato pasta and sprinkle with additional Parmesan and fresh basil leaves for garnish. Serve warm and enjoy your delightful dish!
