1 large whole wheat flatbread or naan

2 cups baby carrots, halved lengthwise

2 tablespoons olive oil

1 teaspoon honey

Salt and pepper, to taste

4 ounces goat cheese, crumbled

1/4 cup caramelized onions (store-bought or homemade)

2 tablespoons fresh thyme leaves (or 1 teaspoon dried thyme)

1/4 teaspoon red pepper flakes (optional)

1/2 cup arugula, for topping (optional)

Balsamic glaze, for drizzling (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 425°F (220°C).

    Prepare the Carrots: In a mixing bowl, toss the halved baby carrots with olive oil, honey, salt, and pepper until well coated. Spread them evenly on a baking sheet lined with parchment paper.

      Roast the Carrots: Roast the carrots in the preheated oven for about 20-25 minutes, or until they are tender and caramelized, stirring halfway through to ensure even roasting.

        Prepare the Flatbread: While the carrots are roasting, place the whole wheat flatbread on a baking sheet. If you like it crispier, you can preheat the flatbread in the oven for about 5 minutes.

          Assemble the Flatbread: Once the carrots are done, remove them from the oven and reduce the temperature to 400°F (200°C). Spread the caramelized onions over the flatbread, followed by the roasted carrots. Sprinkle the crumbled goat cheese evenly on top, then add the fresh thyme leaves and red pepper flakes, if using.
