1 cup (170g) high-quality dark chocolate (70% cocoa), chopped

1/2 cup (115g) unsalted butter

3/4 cup (150g) granulated sugar

2 large eggs

2 large egg yolks

1 teaspoon pure vanilla extract

1/4 cup (30g) all-purpose flour

1/4 teaspoon salt

1/4 teaspoon baking powder

Cocoa powder, for dusting

Optional: Powdered sugar or whipped cream, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Grease a regular muffin tin with butter or non-stick spray and dust with cocoa powder to prevent sticking.

    Melt the Chocolate and Butter: In a medium saucepan, melt the chopped dark chocolate and unsalted butter together over low heat, stirring continuously until smooth. Remove from heat and let it cool slightly.

      Mix the Wet Ingredients: In a large mixing bowl, whisk together the granulated sugar, whole eggs, egg yolks, and vanilla extract until the mixture is thick and creamy.

        Combine Ingredients: Gradually pour the melted chocolate mixture into the egg mixture, stirring gently to combine. Make sure the chocolate mixture is not too hot, or it will cook the eggs.

          Add Dry Ingredients: Sift together the all-purpose flour, salt, and baking powder. Gently fold the dry ingredients into the chocolate mixture until just combined. Do not overmix; some lumps are okay.

            Fill Muffin Tin: Spoon the batter into each muffin cavity, filling them about 2/3 full. If you want extra gooey centers, you can add a small dollop of chocolate ganache or Nutella in the middle of each muffin before adding more batter on top.

              Bake: Bake in the preheated oven for 12-14 minutes, or until the edges are set but the centers are still soft and slightly jiggly. Avoid overbaking for that molten center!

                Cool and Serve: Let the muffins cool in the pan for about 1 minute before carefully inverting them onto a wire rack. Serve immediately while warm, dusted with powdered sugar or with a dollop of whipped cream if desired.
