Rainbow Summer Rolls

12 rice paper wrappers

1 cup cooked vermicelli rice noodles

1 cup shredded red cabbage

1 cup shredded carrots

1 cup cucumber, julienned

1 large red bell pepper, thinly sliced

1 cup fresh mint leaves

1 cup cilantro leaves

1 avocado, sliced

1 ripe mango, julienned

½ cup peanut butter (or almond butter)

2 tbsp soy sauce

1 tbsp lime juice

1 tbsp honey or maple syrup

Crushed peanuts for garnish (optional)

Lime wedges for serving

Instructions
 

Prepare Ingredients: Gather all your fresh vegetables and herbs. Rinse the mint and cilantro and pat them dry. If the rice noodles are not cooked, prepare them according to package instructions, then cool them under running water.

    Make the Dipping Sauce: In a small bowl, whisk together the peanut butter, soy sauce, lime juice, and honey or maple syrup. Adjust the consistency with water if necessary until it’s smooth and drizzly. Set aside.

      Soak the Rice Paper: Fill a large shallow dish with warm water. Soak one rice paper wrapper in the water for about 10-15 seconds, or until it becomes pliable. Remove and lay it flat on a clean cutting board.

        Layer the Fillings: On the lower third of the rice paper, place a small handful of vermicelli noodles, a small amount each of red cabbage, carrots, cucumber, bell pepper, mint, cilantro, avocado, and mango. Be careful not to overfill.

          Roll the Summer Roll: Fold the sides of the rice paper inwards over the filling. Then, starting from the bottom, roll it up tightly to form a log shape. Make sure the filling is secured inside. Repeat this process with the remaining rice paper wrappers and fillings.

            Serve with Style: Arrange the rainbow summer rolls on a platter. Sprinkle crushed peanuts on top for an added crunch, if desired. Serve with the prepared dipping sauce and lime wedges on the side.
